George Lucas has a way of ruining a good thing.
From the moment he sees Greedo holding the gun on him you see that Han Solo isn’t afraid for one moment. This isn’t because he’s not afraid of death, but ultimately because Greedo isn’t a threat. As Greedo runs his mouth we see Han growing more and more restless. When he shoots him it’s a relief and not a big deal to him or any one else in the Cantina.
This is our introduction to Hans Solo and from this moment it shows us he’s a different type of character. The edit of this to make Greedo shoot first adds an aspect to the character that doesn’t belong here. Throughout the trilogy Han learns how to act in the acceptable ways instead of acting first. Changing this scene is something fundamental.
Side note: I’ve always been a huge fan of not using sub-titles and learning what a character is saying through the response they’re receiving.
